Mashed Vegetable Soup

Approximately 1 kg vegetables of your choice
2 vegetable bouillon cubes
1 box of cream cheese (125 g)

1. Cut the vegetables small enough and put them into a pot. Add water so that the vegetables are covered. Cook the vegetables until they are soft.

2. Take a bit (a few dl) of the water away, depending on how thick you want the soup to be. Add the bouillon cubes and cook for a few more minutes.

3. Add the cream cheese. Smash everything with a blender.

I’ve done a mixture with potatoes, broccoli and carrots. Or You can use sweet potato instead of broccoli, that works too. Also broccoli, cauliflower and zucchini work well together.
