Spinach pancakes have become one of our all time favourites these days. Spinach contains a lot of iron, so it’s really healthy.
100-150 gr spinach (fresh or frozen)
5 dl milk
2,5 dl flour (wheat, quinoa, chickpea, rye…)
1 teaspoon salt
1. Cut up the spinach.
2. Whisk the eggs in a bowl. Add milk, flour and salt. Whisk.
3. Add the spinach.
4. Fry in a pan. Each pancake needs approximately 1 tablespoon of butter to fry.
You can choose which wheat to use according to your taste. I’ve used quinoa and chickpea, which are a little more rare and more expensive, but healthier. I’ve used whole milk, but also skimmed or semi-skimmed is fine. We like to eat the pancakes with fresh berries, apple sauce or jam.
